IN SAD news for fans of great charcuterie on the Westside, British chef Brendan Collins has announced his popular Culver City gastropub, Waterloo & City will close at the end of the year.

The news broke Thursday afternoon on the popular local LA Times food blog, Squid Ink. Collins confirmed the news in an email, writing: “Waterloo & City has had an amazing run in Culver City and I love what we’ve built there. The community has been so supportive since the beginning. We truly have the best regulars. This is unlikely its last chapter; Waterloo may find itself a new home sometime in the future. We hope to see our friends in before we say goodbye.”

Before opening his own place, Collins honed his technique at numerous serious kitchens in the area, most notably Santa Monica’s Michelin-starred French restaurant Melisse. And for those who still hanker after Collins’ bold and innovative reimaginings of traditional dishes, he will continue to be involved with his other local restaurant, Larry’s in Venice Beach.
